I have been told you can take a fan end from one snake
and just wire it into an other snake with out an issue
so long as you are careful not to engage phantom power
on both boards at the same time.
I would like some other onsite on this, please and thanks.
I don't know if they really don't sound all that different in a band context or if years of playing in bands with guitarists have honed my guitarist-ignoring skills to perfection.

You can even engage phantom power on both desks without consequence these days.

I wounded if there's any noticeable signal drag without a transformer.

You are saying lots of things there cheese, If you have a transformer isolated split snake you will only be able to supply phantom power from the non-isolated side of the split. DC won't pass thru transformers.
